The Leftovers Sandwich


This morning I woke up with one thing on my mind. You guessed it: leftovers! The second best thing about Thanksgiving is everyone makes way too much food and those leftovers become the staple of my diet for the next week.

But for some reason, I wasn’t feeling too keen on eating my food in the exact same way I did the day before. Enter the multigrain bread sitting in my kitchen. Eureka!


^^^Let’s change it up a bit!

Anyone who knows me will agree that cheese and sandwiches are my life blood. I could eat a sandwich 3x a day, for breakfast, lunch, and dinner. Why not take the mess of leftovers in the fridge which are begging to be eaten and throw them between two slices of complex carbohydrate heaven (“is multigrain a carb?”) — sorry I don’t know why I’m putting Mean Girls references in here.

A week ago during my short time spent in San Francisco, we visited a sandwich shop called Ike’s Place. I had the Going Home for Thanksgiving, which was delicious and is the main inspiration for this sandwich recipe!


The Leftover Sandwich
I N G R E D I E N T S :
bread of your choice, toasted (I used multigrain)
harvati cheese
cranberry sauce

I N S T R U C T I O N S :
1. Toast the two slices of bread. Warm up your leftover turkey, stuffing, and gravy in the microwave.
2. Mix mayo with small amounts of sriracha until it becomes a light orange color. You can add more sriracha if you enjoy spiciness.
3. Spread the sriracha on one side of both pieces of toast. On one piece of toast, layer the turkey and cranberry sauce. On the other piece, layer the harvati, stuffing, and gravy.
4. Place each side of the sandwich together, cut down the middle, and enjoy Thanksgiving all over again.
